Memorial Day Dessert

Well, not the best looking dessert for today’s holiday, but it will be really good. Choux is piped into a ring and baked. Then it is split and filled with some cream and berries. As I have toddlers tugging at me today, my attempt at decorating was very haphazard. I do much better alone!

Basic Choux is very easy to do, but baking large volumes can be tricky. If you mass too much of it together you’ll have trouble getting the “puff”. So while the ring works ok here, I would try and do a simple flat layer.

I’ve added At The Very Yeast to my blog roll but you might want to consider not posting so many great looking desserts or I’ll be one to develop a middle “roll”.

Actually we don’t do that many desserts here. This one is a special treat. And when we “eat real” with good ingredients and without the manufactured chemistry and preservatives, we find we eat less in quantity but have more emotional satisfaction. This dessert will serve 8 or so in a few hours.
